Higher Protein Rice Pudding
If you are like me and in the quest to increase your protein intake, this might be the recipe for you. Essentially it’s rice pudding with added protein. It makes a nice quick breakfast with protein and carbs, mid day pick me up, or an easy dessert.
2 1/2 cups whole milk
1/3 cup uncooked short grain rice
1/2 teaspoon kosher salt
1 egg
1/4 cup maple syrup
1 teaspoon vanilla extract
1/4 teas cinnamon
2 scoops whey protein ( or equivalent of 1 serving whey protein)
In a heavy bottom saucepan bring milk, rice and milk to a boil on high. Reduce heat to low and simmer partially covered until rice is tender, about 20-25 minutes. Stir frequently to prevent the rice from sticking.
Mix together the egg, syrup, vanilla, cinnamon. Whisk well. When the rice is cooked whisk in 1/2 cup hot rice slowly, bit by bit, whisking quickly until well incorporated.
Slowly whisk the egg mixture into the remaining rice in the saucepan. On low heat stir until thickened, or 160 degrees. Be careful not to let the mixture boil and curdle.
Turn off the heat and whisk in the protein powder.
Divide into 4 equal servings. Can be served warm, or cold. It will become thicker as it cools.
Per serving: 244 calories, 6.5 g fat, 34 g carbs, 13g protein
Notes:
I have not tried this with a lower fat milk, but, I am sure it would work, and create the result with a little less calories. I do fear that the pudding will miss some of the richness in texture and flavor that the fat from the milk provides. Might be a nice option if you are watching your calorie intake.
You can up the protein more by adding an extra egg, or an extra scoop for protein. I have tried both. The egg will increase the density of your pudding. Not bad, but not the same texture. The extra protein powder will also slightly change the texture, almost in a bit grainy way, it will also increase the “ milky” flavor of the pudding. If you don’t mind the change, protein it up!! The recipe above is what I have found to be most to my liking of flavor and texture.
